  • 1 tbsp (10g) almonds, chopped
  • 1 tsp olive oil
  • 1 tsp Ras el Hanout
  • Β½ tsp ground turmeric
  • Β½ tsp smoked paprika
  • 120ml (Β½ cup) boiling water

INSTRUCTIONS:

  1. Prep the magic bowl: In a medium bowl, combine dry couscous, Ras el Hanout, turmeric, and diced dates. The dates need to be cut small, about the size of a raisin. They’ll plump up and release their sweetness into the couscous as it steams.
  2. The one-pour method: Pour Β½ cup of boiling water over the couscous mixture. Immediately cover the bowl tightly with a plate or plastic wrap. Walk away. Don’t peek. Let it sit undisturbed for 5 minutes. The trapped steam cooks the couscous perfectly and softens those dates into little pockets of sweetness.
  3. Make the spiced tofu: While couscous steams, heat olive oil in a pan over medium-high heat. Add tofu cubes and sprinkle with smoked paprika.
