CitrineΒ Drift Miso Bowl

Miso Polenta with Garlicky Greens – 22g Protein | Vegan Breakfast

This is my savoury breakfast when I’m tired of sweet oatmeal and smoothie bowls. Creamy polenta infused with miso and tahini, topped with garlicky spinach and a generous sprinkle of hemp seeds – it’s like a warm hug in a bowl, but with 22 grams of protein to actually keep you full until lunch.

The key is stirring in the miso after you turn off the heat. This keeps all those gut-friendly probiotics alive instead of killing them with boiling water. The result? A silky, umami-rich polenta that tastes complex and satisfying, not bland. I make this on cold mornings when I want something warming and substantial, and it reheats beautifully at the office – just add a splash of water and stir.

INGREDIENTS:

  • 55g (β…“ cup) polenta, dry
  • 240ml (1 cup) water
  • 1Β½ tbsp (10g) almond or vanilla protein powder
  • 1 tsp white miso paste
  • 1 tsp (5g) plain tahini
  • 150g (1 cup) frozen spinach
  • 2 tbsp (20g) hemp seeds (hemp hearts)
  • ΒΌ tsp garlic powder
  • Black sesame seeds (for garnish)
  • Chili flakes (to taste)

INSTRUCTIONS:

  1. Cook the polenta: Bring 1 cup of water and a pinch of salt to a boil in a small pot. Slowly whisk in the polenta in a steady stream to prevent lumps. Reduce heat to low and stir constantly for 5-7 minutes until thick and creamy. The polenta is ready when it pulls away from the sides of the pot and has a smooth, porridge-like consistency.
  2. Infuse the umami: Turn off the heat completely. Stir in the miso paste, tahini, and protein powder. The residual heat will melt everything together without destroying the delicate probiotics in the miso. Keep stirring until completely smooth and integrated – you don’t want protein powder clumps.
  3. Wilt the greens: While the polenta cooks, heat a splash of water (about 1 tablespoon) in a small pan over medium heat. Add frozen spinach and garlic powder. SautΓ© for 3-4 minutes, stirring occasionally, until the greens are vibrant, tender, and all the water has evaporated. You want wilted spinach, not swimming-in-water spinach.
  4. Assemble your bowl: Pour the golden, creamy polenta into your bowl. Top with the garlicky spinach in the center. Sprinkle hemp seeds generously over everything – they’re providing a big chunk of your protein. Finish with a pinch of black sesame seeds for visual contrast and chili flakes for heat.

PRO TIP: Polenta firms up significantly as it cools – it basically turns into a solid block in the fridge. If you’re meal prepping this for office breakfast, keep the spinach and polenta in separate containers. To reheat, add 2-3 tablespoons of water to the polenta and warm it in a pan on the stove, stirring constantly. This returns it to its silky, porridge-like state instead of leaving you with a dense, rubbery disk. Add the cold spinach on top of the hot polenta right before eating – the residual heat will warm it through without overcooking the greens.

CHEF’S KISS: Drizzle 3-4 drops of toasted sesame oil over the spinach right before eating. The deep, nutty, almost smoky aroma transforms this from “nice savory breakfast” to “why does this taste so restaurant-quality?” It’s the finishing touch that makes all the difference. Impact: Β½ tsp toasted sesame oil = +20 calories, +0g protein, but the flavor impact is worth every calorie.
