INSTRUCTIONS:

  1. Dry-sautΓ© the mushrooms, onion, and garlic: Place the finely chopped mushrooms and minced onion in a dry non-stick pan over medium heat, no oil. SautΓ© for 4 minutes without moving them frequently. You are looking for significant shrinkage and a dry, concentrated appearance: the water has to leave the pan before you can build a stable patty. Mushrooms that still look wet at this stage will make the mixture too loose to hold shape. Add the minced garlic and sautΓ© for a further 60 seconds until fragrant. Transfer to a bowl and let cool for 2 minutes.
  2. Mash the beans: Add the white beans to a medium bowl. Mash with a fork until approximately two-thirds of the beans are smooth and one-third remain as whole or partial pieces. The chunky third gives the patties texture and prevents them from becoming dense. Do not use a blender or food processor: you need irregular texture, not a paste.
  3. Combine the mixture: Add the cooled mushroom, onion, and garlic mixture, oat flour, nutritional yeast, soy sauce, and smoked paprika to the mashed beans. Season with salt and black pepper. Mix thoroughly until everything is evenly distributed. The mixture should hold its shape when pressed: if it feels too wet, add one additional tablespoon of oat flour and mix again.
  4. Shape and rest: Divide the mixture into two equal portions and shape each into a firm, flat patty approximately 1cm thick. Place both patties on a plate and leave them undisturbed for 5 minutes. This rest period is not optional: it allows the oat flour to hydrate and bind the mixture fully. Patties that skip this step are significantly more likely to crack during searing.
  5. Sear the patties: Heat the olive oil in a non-stick skillet over medium heat. Once the oil shimmers, place both patties in the pan. Do not move them. Sear for 4 to 5 minutes until a deep golden-brown crust has formed on the bottom, then flip once and sear for another 4 minutes on the second side. The crust is ready to flip when it releases cleanly from the pan without sticking.
