I’ve been vegetarian for over a decade, fully vegan for nearly a year now. And here’s the thing nobody tells you about plant-based eating: the food part is easy. The planning part is exhausting.

The mental load was the hardest part.

Not my strong suit. Saying no to seconds? Even worse.
