This is the parfait I make when I want something that looks like it took considerably more effort than it did. Soy yogurt whisked with matcha, agave/maple syrup, vanilla, and hemp seeds into a thick, jade-green mousse – the color is completely natural and entirely from the matcha. Fresh strawberries pressed at the bottom of a tall glass to release their juice into a bright red syrup base. The green mousse poured over, more strawberries on top, toasted phyllo crisps added at the last second for the shatter-crisp contrast against the cold cream.

The matcha and strawberry combination is one of those pairings that works on every level – visually, the deep green and bright red are as striking as a color palette can get, and flavor-wise the grassy bitterness of the matcha and the sharp sweetness of the strawberries sharpen each other rather than competing.   1. Make the matcha mousse: Add the soy yogurt, matcha powder, agave or maple syrup, vanilla aroma, and hemp seeds to a small bowl. Whisk vigorously until completely smooth and uniformly jade green – no matcha clumps, no streaks. For a lighter, airier texture, use a milk frother instead of a whisk and froth directly in the bowl for 30 seconds. The frother incorporates more air and gives the mousse a slightly whipped consistency that sits higher in the glass. Refrigerate while you prepare everything else.
  2. Toast the phyllo crisps: Tear the phyllo sheets into rough bite-sized pieces – irregular shapes toast more evenly than uniform squares. Add to a dry pan over medium heat and toast for 2 minutes, tossing frequently. The pieces are ready when they smell nutty and shatter when you press them. For meal prep or a picnic, pack the phyllo pieces separately in a small airtight bag or container and add them just before eating: the mousse and strawberry layers keep well refrigerated for up to 2 days in a sealed jar, and the phyllo stays crisp stored dry at room temperature.
