INSTRUCTIONS:
- Steam the sweet potato: Place the sweet potato cubes in a steamer basket over boiling water and steam for 10 to 12 minutes until completely tender when pierced with a fork. Do not boil: boiling saturates the sweet potato with water and makes the patty mixture too wet to bind properly. Transfer to a bowl and leave to cool for 3 minutes.
- Grind the sunflower seeds: While the sweet potato steams, place the sunflower seeds in a small coffee grinder or blender and pulse for 15 to 20 seconds until you have a coarse, dry meal. It should resemble rough breadcrumbs. Do not over-process into a paste.
- Mash the base: Add the dried chickpeas to the steamed sweet potato. Mash together with a fork until approximately two thirds of the mixture is smooth and one third remains as partial chickpea pieces. The whole pieces give the patty texture and something to bite into. Do not blend: a paste will not hold a patty shape.

- Sear the patties: Heat the olive oil in a non-stick skillet over medium heat. Once the oil shimmers, place both patties in the pan. Do not move them. Sear for 5 to 6 minutes until a deep golden-brown crust forms and the patty releases cleanly from the pan without sticking. Flip once and sear for another 4 to 5 minutes on the second side.
- Make the tahini drizzle: While the patties sear on the second side, whisk the tahini, lemon juice, and water together until smooth and pourable. Add water a few drops at a time if it remains too thick.
