Pumpkin Red Bean Stew – 26g Protein | Vegan Dinner
This is my autumn comfort bowl. Golden pumpkin, red kidney beans, and carrots simmered in a turmeric-spiced broth, finished with a swirl of oat cream. Itβs the kind of stew that makes your kitchen smell incredible and tastes even better the next day.
I serve it with toasted rye bread for dipping β the hearty, slightly sour bread is perfect for soaking up that creamy, earthy broth. This is what I make when I want something warming and nourishing but donβt want to spend an hour in the kitchen. 20 minutes from start to finish.

Chef's Kiss: add a pinch of cinnamon or freshly grated nutmeg while the stew simmers, and a small handful of fresh cilantro on top before serving.
INSTRUCTIONS:
- Start the base: In a medium pot, heat olive oil over medium heat. Add finely chopped onion and sautΓ© for 3-4 minutes until soft and translucent. Donβt rush this step β properly softened onions add sweetness to the broth.
- Add the vegetables: Add cubed pumpkin and sliced carrots to the pot. Cook for 5 minutes, stirring occasionally, allowing the pumpkin edges to soften slightly and begin to caramelize.
- Build the stew: Pour in the rinsed kidney beans and the prepared vegetable bouillon broth (Β½ cube dissolved in ΒΎ cup hot water). Stir in turmeric and cumin β the turmeric will turn everything a beautiful golden color. Bring to a gentle simmer.
- Simmer until tender: Reduce heat to low and let the stew simmer for 15 minutes, stirring occasionally. Youβre done when the pumpkin is tender enough to be easily pierced with a fork but still holds its shape. Some pieces will start to break down and naturally thicken the broth β this is exactly what you want.
- Finish with cream: Turn off the heat and stir in the oat cream. This creates a rich, silky texture without making the stew heavy. Taste and adjust seasoning with black pepper or a pinch more cumin if needed.
- Toast and serve: Toast your rye bread until golden and crispy. Ladle the stew into a bowl, sprinkle hemp seeds generously over the top, and serve with toasted rye bread on the side for dipping. The bread becomes part of the meal β tear pieces off and soak them in that golden broth.
PRO TIP: This stew is actually better the next day! As it sits in the fridge, the pumpkin releases more natural sugars into the broth, making it taste sweeter and more developed. If it thickens too much overnight (the pumpkin will continue to break down and absorb liquid), just add a splash of water or vegetable broth before reheating. The consistency should be thick but still spoonable, not paste-like.

Either spice amplifies the natural sweetness of the pumpkin and makes the whole dish taste more complex and layered β like something thatβs been cooking for hours instead of 20 minutes.
