Wakame Tofu Soba – 28g Protein | Vegan Dinner
This is the bowl I make when I need to reset. Silken tofu floating in miso broth with tender soba noodles and wakame seaweed β it’s like a spa day in a bowl. The ginger-infused broth is warming without being heavy, and that pop of hemp seeds on top adds just enough texture.
Here’s what makes this special: the miso never touches boiling water. That’s the trick that keeps all those gut-friendly probiotics alive and the flavor sweet instead of bitter. Once you learn this technique, you’ll never go back to dumping miso into boiling soup.

INGREDIENTS:
- 60g (approx. 2 oz / 1 bundle) buckwheat soba noodles
- 140g (approx. 5 oz) silken tofu, cubed
- 1 tbsp (10g) hemp seeds
- 2 tbsp (4g) dried wakame
- 150g (1 cup) frozen broccoli or spinach
For the Broth:
- 480ml (2 cups) water
- 1 tbsp white miso paste
- 1 tsp mushroom seasoning
- 5cm (2-inch) piece fresh ginger, sliced thick
INSTRUCTIONS:
- Prep the wakame: Place dried wakame in a small bowl and cover with water. Let it soak for 5 minutes β you’ll watch it expand to about triple its size. Drain and set aside.
- Build the broth: In a medium pot, bring 2 cups of water to a boil with thick slices of fresh ginger and mushroom seasoning. Let this simmer for 5 minutes to infuse. The ginger should be sliced thick (like coins) so you can easily fish them out later if you want.
- Cook the noodles: Add soba noodles directly to the simmering broth. Cook according to package instructions (usually 4-5 minutes). In the last 2 minutes of cooking, add your frozen vegetables straight from the freezer.
- The Miso Trick (this is crucial): Turn off the heat completely. Scoop about ΒΌ cup of the warm broth into a small bowl. Add the miso paste and whisk until completely smooth β no lumps. Then stir this miso mixture back into the pot. Never let miso boil. Boiling destroys the delicate probiotics and turns the flavor from sweet and savory to slightly bitter and flat.
- Finish gently: Add the silken tofu cubes and drained wakame to the pot. Let them warm through for about 1 minute β no stirring needed, just let them float. Silken tofu is fragile; aggressive stirring will break it into mush.
- Serve: Ladle into a bowl, top with hemp seeds, and add a drop of sesame oil if you have it.
PRO TIP: Always use “The Miso Trick”: turn off heat, whisk miso with warm broth separately, then add back to pot. This is the difference between restaurant-quality miso soup and the bitter, flat-tasting stuff most people make at home. The probiotics in miso are heat-sensitive; keeping them alive means better flavour and actual gut health benefits.
CHEF’S KISS: Add a sheet of toasted nori cut into thin ribbons on top. To toast it, wave the nori sheet over a gas flame (or in a dry pan) for about 5 seconds per side until it turns bright green and crispy. The extra layer of umami makes this taste like it came from a Japanese restaurant. Impact: 1 sheet nori = +10 calories, +1g protein, but restaurant-level umami depth.
